Deixe cozinhar no fogo brando por 30 minutos, mexendo de vez em quando e acrescentando aos poucos o caldo de legumes. Escorra o refogado e reserve o molho que se formou no fundo da panela. Em uma travessa misture o refogado, o ovo e o molho de tomate. Aqueça o forno a 200ºC. Cozinhe o macarrão em água com sal fervente e abundante. Escorra e passe rapidamente na água corrente. Escorra novamente e recheie fartamente cada rigatone com a carne moída. Ponha em um refratário untado com manteiga, regue com azeite e com o molho reservado.
